Instructions for Pastry (Flan Bottom)
To prepare the Pastry (Flan Bottom) recipe, please follow these instructions:
Mix the flour and sugar. Crumble the cold fat in it, for it has a texture like grated cheese. Add the egg yolks and reassemble the quick dough. The dough is very soft, the rest in the fridge for ½-1 hour.
Roll the dough out and place it in a pie dish. Roll the cake roll over the pie shape edge, so the dough are cut off nicely. Prick it with a fork.
Forbag bottom for 10 minutes in a 200 degree C. alm. oven.
Tips:
Roll the dough out on a piece of film, so is the right to lift over in the shape of the movie, press dough well out into the edges and then pull the film off.
Are to be assigned you the table with a wet kaklud just before you put the movie on so it will not slip when you roll the dough out.
