The apples are rinsed, divided and cut into cubes without a core housing. The apples are lightly sprinkled with butter on the forehead until golden and half-lubricated. The omelette dough is whipped together and poured over. The omelette is stiffened over low heat while sticking in the dough here and there with a pallet knife so that the soft dough can run down and be baked. The pan is shaken fast back and forth so that the omelet is pushed loose. When the underside is light brown and coherent and the surface is almost stiff, carefully let half of the omelet slip on a warm dish. The apples are laid on and the other half of the omelet folds over with the palette knife. It is sprinkled with sugar before serving.
