To prepare the Melanzana alla Parmigiana recipe, please follow these instructions:

The peeled tomatoes are seasoned and heated with oil and basil leaves and salt. Three whole eggs are whipped together with a glass of water and a little salt for a pan. Peel the aubergines and cut them in slices along. Dissolve the slices with salt, dip into the egg yolks, then turn into flour and fry for a couple of minutes. When golden, lay them in a refractory dish with the hot tomato sauce, mozzarella, basil and the cracked parmesan. At the top there are some butterballs and some whole basil leaves. Bake for 5-10 minutes at 180-200 degrees until the surface is golden.
