To prepare the Mayonaise - easy to do recipe, please follow these instructions:
Whip egg yolks airy (a few minutes).
Add oil, stirring, first dropwise and later in a thin jet.
Add vinegar, salt and pepper and whip again.
Voila.
tips:
Egg yolks should be at room temperature as they are easier to whip airy. I use an empty, cleaned, jam glass and a hand mixer with one rice mounted. I put the glass in a dish on top of a pair of kitchen linens, so it does not spin. Can last a few days in the fridge.
