Ingredients for Marshmallows

Icing sugar
A little color and flavoring
Corn flour (sifted)
1tbspLiquid glucose
2Egg whites stiffly beaten
2tbspPrepared Seville oranges or rose water
30gGelantinepulver/isinglass
dlWater
500gSugar

Instructions for Marshmallows

To prepare the Marshmallows recipe, please follow these instructions:

Put a thick-bottomed pan over the stove on medium heat with the sugar, glucose and 2 dl of water. Stir constantly until the sugar is completely dissolved. Bring the solution to a boil without stirring. Increase the heat and boil until sugar solution reaches a temperature of 125-130 degrees. Soak gelantinen in the rest of the water with added ready Seville oranges or rose water in 5-10 minutes. Dissolve then gelantinen gently above the boiling water. Add color and the flavors are now, if desired. Mix sugar with the melted gelantine solution. Whisk constantly with whisk and pour little by little the entire mixture into the whipped egg whites. Pudr a thick let icing sugar over the mixture and wait 1 hour to give the opportunity to dry and form a crust. Then cut it into kvardrater. The mass may tend to stick in the knife or the form.
