Ingredients for Mandel Gelato

EVS. a few drops of almond oil extract
EVS. a few Italian macaroons
EVS. some fresh fruit
1tspCorn flour
1tspVanilla sugar
2.5dlWhipped cream
2.5dlWhole milk
4Pasteurized egg yolks
50gSugar
90gAlmond flour or mixed peeled almonds

Instructions for Mandel Gelato

To prepare the Mandel Gelato recipe, please follow these instructions:

The whole milk is mixed with maizena and sugar and given a boil.

The egg yolks are whipped well with sugar and vanilla sugar and the hot milk is added in a thin beam under strong whipping.

The milk mixture is returned to the pan and heated under stirring to thicken (and the foam disappears) - make sure it does not get too much heat.

Almond flour and almond oil extract, add the warm milk mixture and it draws while it cools.

Whipped cream is whipped half-stitched, mixed with the flavor mixture and run in an ice machine - if necessary. In the freezer afterwards to be completely finished.

Serve with some fresh fruit and a pair of Italian macrons (hard or soft).
