Instructions for Italian milk dairy
To prepare the Italian milk dairy recipe, please follow these instructions:
Boil the whole milk with the battered vanilla and the chopped grains. Let it pull away from the fire.
Whip the egg yolks long with the sugar until the mass is white and airy.
Put the milk over the egg yolk and squeeze all the juice of the vanilla bar. Whip the pulp and pour it back into the pan.
Gently heat up with stirring. As soon as the cream shows signs of drowning - i.e. It must hang so much by a wooden box that one finger can draw a line on the back of the spoon that holds the 'track'. The cream must absolutely not boil.
Pour the cream into a bowl and chill it off with frequent whipping.
Pour the cold cream into an ice machine and freeze it according to the machine's instructions.
tips:
The ice can be varied like other icecream recipes with eg. Adding crushed hard nougat, or 50 g of cocoa cooked with milk and vanilla.
