Instructions for Fish and chips 02
To prepare the Fish and chips 02 recipe, please follow these instructions:
Share the eggs (save both white and plum)
Sieve 200 g. Flour in a bowl.
Add sugar and stir it together.
Add egg yolks, beer, salt and pepper and stir it together.
Mix milk and water and add to the dough getting thick and even.
The dough must now rest for approx. 30 min. in the fridge.
Peel the potatoes and cut them 1x1 cm. slices. Throw them in a bowl of cold water until they are used.
Wash the fish, dip it dry with a kitchen roll and turn them in the last 80 g. Flour.
Heat the oil to 160 gr.
Whip egg whites stiff and gently turn it into the dough. Dip the fish one at a time in the dough.
Pour the water from the potatoes and dry them thoroughly.
Boil the potatoes for approx. 10 min in the oil and pick them up to drip off.
Increase the oil temperature to 180 gr.
Boil the fish for 4 -5 min. Until the dough is golden grun.
Take the fish and boil the potatoes for a few more minutes.
Take the potatoes and sprinkle the fish and the fritters with salt and ground vinegar.
