To prepare the Cold jambalaya salad recipe, please follow these instructions:

Melt the butter in a saucepan and saute the onion and garlic. Add water, ham, salt, cayenne pepper and bring to the boil. Add rice and bring to the boil again. Turn down the heat and let it cook for 15-20 minutes until the rice is tender. Mix olive oil, vinegar and lemon juice. Pour the mixture over the rice. Add the chopped spring onion, minced celery, peppers and tomatoes, diced into cubes. Cut the chicken into small pieces and mix them in the rice. Serve with finely chopped parsley.
