Ingredients for Coffee Cream
Good dark chocolate | ||
½ | cup | Strong coffee |
1 | tbsp | Whisky |
135 | g | Sugar |
2 | leaves | Isinglass |
2 | tsp | Vanilla sugar |
2½ | dl | Whipped cream |
4 | Egg yolks |
Instructions for Coffee Cream
To prepare the Coffee Cream recipe, please follow these instructions:
In a large metal bowl, egg yolks, coffee, vanilla, whiskey and sugar are whipped together. Place the bowl over a pot of boiling water. The bowl must not reach into the water. Whip for 3 min. Or until the cream thickens. Pour the cream into a small bowl and let it cool off. Meanwhile, the house blossom is soaked in cold water. Knock the house blossom and put it in a small pan with 2 tablespoons of water. Let it dissolve over low heat, cool it a bit, but not so much that it stiffens. Bring the house leaf into the cream dropwise and mix thoroughly. Fill the cream in cups or small bowls and put them in the fridge. When serving, the coffee cream is sprinkled with chopped chocolate.
