Ingredients for Classic pepper steak
0.5 | tsp | Mustard powder |
2 | dl | Sour cream |
2 | tbsp | Whole black or green pepper |
2 | tbsp | Sunflower oil |
4 | tbsp | Cognac |
4 | slices | Fillet of approx. 200 g |
Instructions for Classic pepper steak
To prepare the Classic pepper steak recipe, please follow these instructions:
Let the meat stand at room temperature for half an hour before cooking, it makes the meat more tender. Pat the meat with paper towel paper.
Shock peppercorns in a mortar. Sprinkle mustard powder over meat. Came the crushed peppercorns on a plate. Turn the meat in peppery and press it well into the meat.
Heat the oil in a thick-bottomed skillet. Fry the meat 2-3 min. per side for red, 3-4 min. per side for medium, and 5-6 min. per side for well done. Put the meat on a hot serving dish, cover it and keep it warm.
Take frying pan from heat, add the cognac and whisk well. Pour sour cream in, put the pan back on the heat and let simmer 2 minutes while stirring. Pour sauce over meat and serve immediately with fried or baked potato and fresh vegetables.
Tips:
Green peppers are the unripe fruit from pepper Bush "Piper Nigrum". It has a somewhat milder flavor than black pepper.
