To prepare the Cajun ham salad with sweet potatoes like in Louisiana recipe, please follow these instructions:
Put the sweet potatoes with so much water that they are covered in a 3 liter saucepan over high heat and bring them to a boil. Turn down the flask, put on the lid and simmer for 10-15 minutes or until the potatoes are very tender. Pour the water off.
Heat 1 tbsp. Olive oil, in a pan over medium heat, and season the ham, mustard onion, garlic and black pepper until the ham is light brown, with frequent stirring. Add the sweet potato pieces, step them 3-5 minutes longer, or until they are tender.
Mix mustard, vinegar, cayenne pepper and lettuce in a bowl. Add the potato mixture, stir it all together well.
serving:
Spread the pork chops on a dish and put the potato salad on top.
