Instructions for Breadbread cake a la Merete
To prepare the Breadbread cake a la Merete recipe, please follow these instructions:
Whip egg yolks and sugar airy.
Add (mixed) rye bread, cocoa, potato flour and baking soda
Whip egg whites (can be whipped as whole eggs, but it will be best separately)
Turn the egg whites into the pulp (gently ... do not whip at all)
Distribute in 2 spring shapes, baked at 200 gr for 15.20 minutes (until you can see it loosens at the edge)
Take out and freeze until use. (It is best to put the layer cake together when the bottoms are frozen so that the filling is not thin)
½ liter of cream is whipped to foam
300 grams of frozen raspberries are easily crushed with a meat hammer and mixed with barely 1 dl sugar.
2/3 parts of the whipped cream are mixed with raspberries and laid between the bottom and top.
The rest of the whipped cream is used as a decoration around the edge.
