4slicesSalmon of approx. 200 g

To prepare the Boiled salmon with slices of carcasses recipe, please follow these instructions:

Melt the fat into a sautere pan. Put the salmon slices in it. Season with salt and pepper. Pour wine or fish broth and add a few parsley.

Let the salmon simmer by low heat under the lid, approx. 6 minutes. Remove the pan from the stove and leave it to stand for approx. 5 minutes. Chop the pot in the food processor and mix it with the butter. Season with lemon pepper.

Place the salmon slices on four hot plates and put a slice of batter on each slice.

Serve potatoes and a salad.
