½dlFinely chopped chives and Chervil or parsley
½dlWhipped cream
1dlWhite wine
tbspWheat flour
2Egg yolks
2dlChicken broth
50-75gCaviar. (lumpfish ROE of vendace or)
700gWhite and/or green asparagus

To prepare the Asparagus with spice sauce recipe, please follow these instructions:

If you use white asparagus, they must be peeled from head to foot, they should not green. Rinse the asparagus in cold water and crush the wooded end. Boil asparagus in salted water 2-3 minutes for the green and 6-7 minutes for the white ones. Let them drip and reinsert them with a clean cloth. Whip the flour directly into the wine in a saucepan.
