Menusteak raffort (minutsteak horseradish)

The tenderloin is knocked out to a steak / steak approx. 0.5 cm thick. Stir on a smoking hot pan in a little grape seed oil, approx. 1 minute on each side. Serve with a slice of lemon and place a slice of butter, which in turn is spiced up with grated horse

Steak Bearnaise

Begin with the sauce as it takes the longest time. Pour the bearnaise essence and the estragon vinegar into a saucepan which is placed over a water bath, after which the egg yolks are whipped. Continue whipping until the sauce has become even and creamy.
