4Pasteurized egg yolks
60gCane sugar

Instructions for Zabione

To prepare the Zabione recipe, please follow these instructions:

Whip egg yolk, sugar and liqueur together in a bowl. Put the bowl over the water bath and whip with an electric whip until the cream is viscous and foaming. Put the bowl in a cold water bath and whip until the cream has cooled. Bring the cream into high dessert glasses and put it in the fridge. Decorate each glass with an orange slice.
