1/2lCoconut milk
1/4lChicken Fund
1–2tspFinely chopped red chilli
2tbspFish sauce
3Fillets of chicken breast cut into thin strips
5cmPiece galangal
7gFresh coriander leaves

To prepare the Soup with chicken and coconut (Tom Kha Gai) recipe, please follow these instructions:

Peel the galley piece and cut it into thin slices. Mix galangal, coconut milk and chicken stock in a medium-sized saucepan. Bring it to boil and simmer without lid at low heat for 10 minutes, stirring occasionally.

Bring chicken strips and chilli into the pan and simmer for approx. 10 minutes, make sure the chicken meat is cooked. Stir fish sauce and go in. Add coriander leaves and serve the soup immediately decorated with fresh coriander.
