The green asparagus is steamed in boiling, leached salt for approx. 5 min. And dragged. The egg yolks are squeezed through a sieve and mixed with melted butter, creme fraiche, nutmeg and mustard powder. Season with salt. Put the slices on a dish. Asparagus is placed on top and decorated with the egg cream, as if necessary. Sprayed on. The dish is decorated with the chopped whites.
Served with freshly baked rye bread.
