Broccolien cleaned and cut into smaller pieces, which is steamed perfectly tender in slightly salted water-ca. 10 min. drain and steam broccolien completely dry (take four bouquets from for garnish), before blending it with eggs and sour cream. Season with nutmeg, salt and pepper and fill the mass in four small, greased moulds. Steam record owners in a little water in a sautérpande with lid approx. 12 min., or behind them in the oven at 200 degrees for approximately 20 minutes.
