To prepare the Salad of black beans, asparagus and lemon fries recipe, please follow these instructions:
Set the beans to soak overnight. Change the water and cook them for about 40 minutes. Let them cool. Cut the green asparagus into bite-sized pieces, preferably diagonally. Blanch the asparagus in salted water for about 3 minutes. Got them in ice cold water. Cut the spring onions into thin slices, and chop the coriander leaves. Mix beans, asparagus, scallions and cilantro. Season with olive oil, lemon juice, salt and white pepper. Let the salad pull. Cut lemon shell into very thin strips, only a few millimeters wide. Heat the oil and ferrets lemon strips in it. They are done when the sides are beginning to take color. Put them on fat-absorbent paper. Serve the salad on a platter and sprinkle with lemon fries.
