To prepare the Raspberry Sorbet Mousse recipe, please follow these instructions:
Clean the raspberries, but do not rinse them. Run the raspberries into puree in a mixer and then pass the purée through a sieve so that no cores are left. Give water and sugar a boil and stir until the sugar has dissolved. Let the layers get cold. Mix the layer of puree into a bowl and place it in the freezer for 1-2 hours until the mixture is semi-frozen. Take the semi-frozen mass and whip it airy with an electric whip. Put it back in the freezer for an additional 1 hour and whip sometimes along the way. Whip the cream stiff and mix it with raspberries about 1 hour before serving. Pour the mousse into a mold and style the mold in the freezer for another hour. Run the raspberries to the sauce in a mixer, pass them through a sieve and taste with sugar. Turn the mousse out on a serving dish and decorate with some fresh raspberries. Serve the sauce.
