Instructions for Puerco Pibil
To prepare the Puerco Pibil recipe, please follow these instructions:
Mix the juice of orange and lemon into a bowl. Add the battered apricot, garlic, oregano, bowl, cloves, cinnamon, salt and pepper and mix well.
Cut the meat into 5 cm. Pieces Put them in a layer in a dish and pour the spiced fruit juice over. Cover the dish with foil and let the meat pull in the marinade for 6 hours at the kitchen temperature or 12 hours in the fridge. Flip the pieces every now and then.
Put two layers of aluminum foil in a door layer. Bring the pieces of meat and pour the marinade over. Gather the aluminum foil all the way so the marinade stays at the meat.
Place the dough layer in a saucepan where there is so much boiling water that it hardly reaches the door layer. Put the lid on the pan and steam the meat for 1 ¾ hours. Add if necessary. More water if necessary.
Place the meat in a deep dish at the serving and pour the sauce over. Eat hot tortillas instead of bread.
