The pork tenderloin is trimmed and cut for approx. 8 medallions. Piqueers with smoked bacon. Peel off the pork tenderloin (vegetables, 1 onion, 1 leek, a little carrot, thyme and garlic) on a large pan. When the medallions have got a nice color, they are placed in the oven for 10 minutes at 160 degrees. The grease is removed from the forehead and the porridge is added to the chopped meat with the green matter. It is boiled down and sieved. Boil new potatoes, asparagus and carrots with a little butter. Scalloped and garlic added to the poultry broth that is boiled down. Chives are added. The medallions are turned into sauce and prepared.
