Instructions for Pastinakmos
To prepare the Pastinakmos recipe, please follow these instructions:
Beans should lay in soft overnight. They are cooked 30 min. (Some beans need to cook longer) until they are tender. The parsnips are peeled and cut into smaller pieces to make it easier to cook. They boil until they are very tender (30-45 min depending on size and maturity).
Beans and parsnip mashed with a fork. Tomato and onions are cut into smaller pieces and lighted easily on a pan with a little water until they are slightly tender and then mixed in the bog. Season with salt, pepper and sugar. Add if necessary. A little milk to give a more aggregate mass.

The moss is suitable as an accessory and in pancakes (there are about 5 large pancakes)
