1Small bdt. flat-leaf parsley
1-2cloveGarlic
3-6Salted anchovies depending on size

To prepare the Monkfish cheeks with orange gremolata recipe, please follow these instructions:

To gremolataen chopped parsley, orange zest, garlic and anchovies finely. Mix everything together and season with freshly ground pepper.

Cut the dark membranes of the jaws with a sharp knife. Brush with olive oil, season with salt and pepper and roast or grill them on a hot roast or grill pan for approximately 5-6 minutes, depending on size.

Serve the jaws on a platter or plates and sprinkle with gremolataen.
