Instructions for Cullottesteg
To prepare the Cullottesteg recipe, please follow these instructions:
Cut the fat layer in the pattern. Rub the ladder with salt and freshly ground pepper. Lay the ladders on the oven grille over a frying pan.
Put the steps in the middle of the oven at 225 degrees C. alm. Oven for 10 minutes.
Moisten the heat to 190 degrees C. alm. Oven and pass the culotte in a further approx. 20 - 30 minutes.
Use a step thermometer. When the center temperature is 62-66 degrees, the steps are complete.
Grill the meat for the last few minutes if the grease is not golden.
Remove the meat from the oven and allow it to rest for 10 minutes.
Research:
Notice the muscle wires. They show that the culotte must be cut a little obliquely from the wide end. The slices must be cut out thinly.
