Ingredients for Choco-caramel balls
1.5 | dl | Acacia honey |
1.5 | dl | Whipped cream |
150 | g | Sugar |
2 | tbsp | Light syrup |
200 | g | Dark chocolate with high cocoa content |
Instructions for Choco-caramel balls
To prepare the Choco-caramel balls recipe, please follow these instructions:
1. Add sugar, whipping cream, honey and syrup in a small saucepan.
2. Let the mass simmer until 120 degrees. Pipes along the way, so the mass do not burn on.
3. Pour the mass up into a mold lined with baking paper, when it is 120 degrees hot. Cover it and style it in the pet community for approximately 2 hours.
4. Melt the chocolate over a water bath: style a bowl in a pan of water. Put the desired amount of chocolate in the bowl, and slowly warm the water up until the chocolate is melted.
5. take the mass out of the pet community, cut it into small cubes and roll them into balls.
6. Plug a Tip Roast fork or skewer into the ball and dip it in the chocolate.
7. Style balls on a piece of wax paper and let the chocolate harden.
Tips:
It can be a bit cumbersome to keep balls round, because caramel mass is very soft. Tril a few balls at a time and place them in the freezer on a small plate lined with wax paper. Take first the balls out just before they are to be overdrawn with chocolate. Covers only a few pieces at a time.
