To prepare the Baked fish with tomato sauce and olives recipe, please follow these instructions:

Heat the oven to 180 degrees C Put fish pieces in a baking dish lined with baking paper. Brush them with oil and season with salt and pepper. Set the dish in the hot oven for 8-10 minutes depending on fish thickness strips.

Sauce: fry the onion in the oil, stirring in a saucepan in 1-2 minutes. Add the garlic and fry it for a further 0.5 minutes. Add the tomato concentrate, peeled tomatoes, white wine and bay leaf and bring the sauce to a boil. Let it cook for 5 minutes. Taste the sauce with salt and pepper and return to the last olive in.

Place the fish pieces on preheated plates and pour sauce over.
