The apples are flushed. The core housing is drilled out. The apples are peeled and brushed with lemon juice so that they do not get dark. Water, sugar and wine are boiled. Season the apples and refrigerate. Cream, egg yolks and sugar are heated under constant stirring until it starts to be even, but it must not boil.
