The mussels must be fresh at the time of purchase, that is, they must be closed and smell fresh.
They are scrubbed and washed thoroughly in cold water. Come in a saucepan with melted butter, and there are sautéed finely chopped herbs. The white wine and fish fund are cooked and it boils for approx. 2-3 min.
The mussels come on and they are steamed for about 5-8 minutes under low until they are well open. The chopped parsley is over.
