1000 | g | Chopped zucchini |
1-1.5 | kg | Mature peeled and diced tomatoes |
2 | tbsp | Olive oil |
2.5 | dl | Chopped celery |

Squeeze the chopped tomatoes through a coarse sieve, so that the kernels will be back. Sauté onion and celery in oil. Add the squash, tomato paste and sugar. Let it simmer until it is cooked anything in and tyknet. Stir in the sauce occasionally, so it does not burn on.
Season with salt and let it cool. Filled in plastic containers with room for expansion in the freezer.
The vegetable mixture is very well suited to soups and stews, or it can be served in a creamy stew in squash shells.
