To prepare the Southern fried chicken (2) recipe, please follow these instructions:
Cut the chicken into medium-sized pieces. It is a little difficult to give exact instructions here, as it is up to the individual to choose how big the pieces must be, but inserts URf.eks. the breast into four pieces and keep the drumsticks and thighs whole, respectively. Keep in mind that the best result is achieved if the pieces are roughly equal.
Place the chicken pieces in a large kitchen Bowl and let them marinate totally covered by the milk in the refrigerator for at least four hours, like in twelve hours. Mix the flour, bread crumbs and baking soda now in a clean madopbevarings plastic post, roast bag or similar, take out the marinated chicken pieces up, sprinkle them lightly with salt and pepper and place them in the plastic bag and shake thoroughly until they all are uniformly covered with bread crumbs mixture.
The fat is heated in one or two frying pans, until it is very hot, it may not, however, smoking (the fat has to be at a depth of approximately 2 cm. in the Pan). Place the breaded chicken pieces into the fat and fry them without lids at medium heat, since the pieces are sometimes reversed. Frying takes from 30-60 minutes depending on size of chicken pieces, if available. It is very important to FRY at medium heat, if the heat is too high, will be the pieces burned without on before they have been fried, and if the heat is too low, they aren't crisp.
