The shrimp are arranged like this: Wash the shrimp in cold water. Cut the last 2 mm. Off the tail and push the water out. The shell is peeled off, except the last 2 joints on the tail. Make 2 or 3 scratches on the stomach side (5 mm between each scratch). Marines with wine and salt. The dough is made: Whip egg whites stiff. The flour is sprinkled and mixed well. The worm on the shrimp is wiped off with a cloth and sprinkle the potato flour. Heat oil to medium heat (170 degrees). Hold the tail's tail and dip it into the dough. Step the shrimps light brown or golden. The shrimp must not touch each other. Appointed and served warmed.
