A few sprigs of lemon balm
1dlWater
2Egg whites
2dlWhite wine
dlConcentrated juice of elder flowers

Instructions for Shelf Sorbet

To prepare the Shelf Sorbet recipe, please follow these instructions:

Mix shelf blossoms, water and wine in a bowl that can withstand the freezer. Place the bowl in the freezer for approx. 1 hour so the liquid turns into a semi-solid mass.

Whip egg whites to hard foam. Take the bowl out of the freezer and whip the mass through. Mix the whipped egg whites in the pulp. Put the bowl in the freezer again, this time for 2 hours.

Bring the sorbet into a bowl and decorate with a little lemon balm.
