To prepare the Raspberry and lemon parfait recipe, please follow these instructions:
raspberry ice:
Whip the egg yolks and sugar white and airy. Whip the cream to hard foam and mix it in the egg yolk. Moss the raspberries a little and mix them in the mass. Closed an oblong shape, 2 l with plastic foil. Pour the ice-cream in, it must reach halfway up the edge. Cover with plastic foil and style it in the freezer. Leave to stand for about 1 hour until it starts to get tough.
Citronis:
Whip the egg yolks and sugar white and airy. Add lemon juice and peel. Whip the cream stiff and stir it and creme fraiche into the egg yolks. Remove the mold from the freezer. Put some whole raspberries over the raspberry parfait and bring the lemon parfait over. Cover with plastic foil and re-shape the mold in the freezer. Leave it for about 3 hours.
Leave the parfait in the fridge for 30 minutes before serving. Remove the parfait from the mold and cut it into slices. Put the slices on a dish and decorate with raspberries and lemon peel.
