Ingredients for Plum Pudding

The juice and it diced ½ Orange and ½ shell of lemon
As far as possible should the fruit prior to be threaded by the liquid adding
1.5dlCognac or rum
12gMixed spices m. plenty cinnamon
120gChopped almonds
2dlStout (English beer)
250gWheat flour
250gMalaga grapes currants and smyrna-raisins
250gPowder sugar
250gPeeled and chopped apples
3Eggs
500gBread crumb
500gMinced beef kidney fat
60gCandied orange peel cut into small cubes
60gCedrat (sukat) to candied sliced in small cubes
60gLemon peel candied sliced in small cubes
60gGinger

Instructions for Plum Pudding

To prepare the Plum Pudding recipe, please follow these instructions:

Mix everything together well and place in white earthenware bowls, without stand and with protruding edge. The mass is pressed together and covered with a tissue soaked with butter and sprinkled with flour, which tied in a knot at the bottom. Pudding is cooked by steam or boiling water for 5 à 6 hours. When the pudding must serve, smear it with warm cognac or rum.

Serve with Sabayon with Rome or butter with brandy.
