Brown pigvaren 2-3 minutes in a little butter and season with salt and pepper. Got it in a medium hot oven for about 10 minutes. The sauce is made by whipping egg yolks and water together over a water bath. When the egg yolks have been thick add butter while stirring coped. Season to taste with lemon juice and cayenne pepper. Server steamed spinach and Croutons rubbed with garlic.
