Instructions for Panzerotti agli spinaci
To prepare the Panzerotti agli spinaci recipe, please follow these instructions:
240g flour kneaded with 2 eggs and a little cold water until you get a smooth dough. Boil 1/2 kg fresh spinater (whole leaf) and mix them with 2 tablespoons olive oil. (Personally I would give them a ride in the pan with 1 clove of garlic, so they lose all the water, and when cooled, mix them with 1 egg, nutmeg and a handful of grated Parmesan cheese). Deploy the dough a few mm thick (not too thin) and cut it into 5 x 5 squares. Got a little fill on them and close the edges, if desired. with a little beaten egg. Panzerotti FRY in hot fat (?) until golden.
