To prepare the Ice chocolate (confectionery) recipe, please follow these instructions:

Chop the chocolate roughly and melt it over the water bath with the palmin. Stir in it while it melts, do not allow water or water vapor.

Remove the bowl from the water bath and stir the cream gradually. Whip in the mass until it is almost cold and stiff.

Bring the mass into a crankcase with a crushed bullet and spray the mass into small chocolate caps or on a board covered with plastic or oiled paper. Let the confection dry completely.

Store coolly in cans or boxes.
