Instructions for Grape Sorbet
To prepare the Grape Sorbet recipe, please follow these instructions:
Scrub the fruits well in lukewarm water. Tear the skull of ½-¾ and squeeze the juice from both. Pour sugar and mineral water into a pan and heat until the sugar is just melted. Then cool in a cold water bath. Add the juice and mix well. Put it in the freezer for an hour. Whip the egg whites with the salt to solid foam and gently turn it into the half-frozen pulp. Put it back in the freezer for about 2 hours. Take out the bowl and whisk the ice well a couple of times along the way, so the ice crystals do not get too big.
Deep possibly. Serving the glasses in a little water or lemon juice and then in sugar to form a frosted edge. Slice the sorbet into four serving glasses.
