1tbspFinely chopped chives
2tbspTruffle oil
4Warm brioche
6tbspCold butter cut into small pieces
8Large eggs

To prepare the French scrambled eggs with truffle oil recipe, please follow these instructions:

Whisk eggs and Danish water easily together with a fork. Melt 2 tbsp. of the butter in a metal bowl over a water bath. Add the egg mixture and cook it over low heat. Stir gently and scrape the stiffened egg mass from scratch, until the egg mixture is almost fixed. Add the rest of the butter, one piece at a time, until the egg mixture is cooked through, but still soft. Sprinkle with salt and pepper. Dripping truffle oil over and sprinkle with chives.

Garnish, if desired. with a few slices of truffle. Serve immediately with brioches.
