Slice the meat through to the Middle, to produce a large pocket on one side of the roast.

Rub it with salt. Hug the Green peppercorns in a mortar or between two tea spoons. Mix them with mustard, basil, Sage, marjoram and oil. Add the chopped parsley and onion.
