Instructions for Black currant gelato
To prepare the Black currant gelato recipe, please follow these instructions:
Blackcurrant cream: Blackcurrant and sugar shaken together and stands for the berries start to drin, or also add ½ dl. water.
Berries brought to the boil, and småsimrer to it is good thick, about 20 minutes.
The berries sifted through a dense sieve.
Because mass: egg yolks whipped with sugar.
Whole milk is given a rehash with the empty vanilla-pods after which they are removed and added to the egg mixture in a thin beam under the thorough whipping.
Mass met back in the Pan under low heat (or best under water bath) and warmed/whipped for it thickens and the foam disappears.
The mass is poured back into the bowl and allow to cool in the fridge before it is used.
Before the ice run on ice machine add the cooled currant cream.
