Chop the scallops and put them together with the cinnamon in a large bowl. Pour apple juice over, cover and leave to stand overnight. Pour the mixture of scallops and apple juice together with the yeast curd in a blender and blend it into a lind mass. Pour it into a glass, add ice cubes and sprinkle with cinnamon as desired.
