To prepare the Pork shank (eisbein) with sauerkraut, Donnerwetter (Roaster) recipe, please follow these instructions:
Ask the butcher to cut the shank in 4 pieces.
Put the shank in a thoroughly moistened roaster and cover with so much water that it is covered, set in oven 1 hour at 200 degrees c. alm. oven.
Take the shank up and pour the væden from the roaster, but save it.
