Instructions for Pomme Anne (muffin shape)
To prepare the Pomme Anne (muffin shape) recipe, please follow these instructions:
Peel the potatoes and cut them into very thin slices of mandolin or alternatively a potato peel.
Melt the butter and add finely chopped rosemary and simmer for a few min.
Pour potatoes and melted butter into a bag and knead together, store a little butter to lubricate the mold.
Butter the muffin shapes
Put a few layers of potato slices into the molds, sprinkle some salt and pepper and then a layer of cheese. This is done until the mold is filled up.
Put in oven at 200C for one hour, the first half hour with silver paper over.
Pour on a plate and sprinkle salt and pepper on. Is now ready for serving
