To prepare the Pasta with 4 cheeses - quattro formaggi recipe, please follow these instructions:

Bring the Gorgonzola into small pieces, tear the Parmesan tart and split the mozzarella lumps into smaller pieces.

Melt butter and cream in. Bring slowly to boil while stirring. When boiling, screw it down and add Mascarpone. Now the sauce must NOT boil more.

When the mascapon is melted, add the rest of the cheeses and melt slowly while stirring.

Serve immediately over or to pencil pasta.
