Cut the tomatoes into slices. Make a bed of lettuce and tomatoes on 4 plates. Peel avocados and cut the avocado flesh into cubes. Mix them with lemon juice. Chop the nuts coarsely. Mix avocado, nuts and shrimp, and favor it on the plates. Beat the vinaigretten together, and drizzle it over. Garnish with the whole smoked shrimp and olives.
