Instructions for Zabaione mousse
To prepare the Zabaione mousse recipe, please follow these instructions:
Eggs and sugar are mixed in a stainless dish. Whip with a whipping until the mixture is white and foaming. Marsala is poured dropwise into the mixture whipped until it is completely uniform.
The bowl is placed over a water bath at low flare. Stir until the mass becomes thick and soft. The bowl is removed from the flare and completely cooled.
In another bowl whipped cream until it is light and airy. The whipped cream is gently rotated in the cold Zabaione mousse.
Served in high glass with half pears
